Fondue Weekend, From Scratch


As so many engaged couples do, we registered for one of these:
Of course, after one year of marriage, we still had never used it.  I blame it on the move overseas and the lack of storage pace, which keeps this baby hidden.  Well, no more excuses, fondue is here to stay!

We started of on Saturday night with a cheese fondue.  I found this recipe online from the vegetarian times website, and then we altered it a little.
The recipe called for a Mexican beer, but we thought USA all the way!
The first step was simmer about 2-2.5 cups beer with some mashed garlic.
While Ryan was working on this, I started shredding the pepper jack cheese.
Look at all that cheese.  I am thinking we could have been fine with half of this.
Then we added a mixture of water and flour to the beer and garlic.
In went the cheese and out went the picture taking.  In an effort to not burn the cheese, I had to work fast and could only stir in a handful of cheese at a time.  Therefore, not pictures of the cheese on the stove.

As this was a From Scratch Weekends meal, we had planned to make our own bread.  This was out intention, however on Saturday morning when we were at the local market, we stumbled upon some still warm and very nice looking bread.  We bought it, and decided making our own would just be too much.  We really couldn't resist this bread.  Could you?  At least this was super local from a bakery in the next village over and only contained a handful of ingredients.
This is the typical island bread and most restaurants serve this with the meal.

When it is time to clean up, you just use the little cover to put out the flame from the sterno.
All done!
Well, all done with the cheese portion at least.


Monday Ryan was off from work, so we saved the chocolate fondue for then.
I am not so good with a knife, and Ryan is a superior knife handler, so I made him do all the cutting.  They always give pineapple here with fondue, so we HAD to have some with ours.

Then I got to work on the chocolate.  It was easy.  Condensed milk (1/4 cup) whisking continuously, then adding fat free evaporated milk.  Remove from heat and add chocolate chips or chocolate chunks.  We used the Hershey's and they tasted great.  Again, we did not 100% follow the recipe, we just threw everything in.  How can you go wrong with chocolate?!?!?
I forgot how thick condensed wilk was.

These cookies came from the same bakery as the bread from the other meal.  We bought these at the grocery store.  The local major grocer is featuring products from the Azores right now, so we decided to try these dipped.  In the middle are the rest of my kosher for Passover marshmallows.  There were only 4 left, so we dipped those too.

Yep, leftovers.  We dipped some cookies in chocolate so it didn't go to waste.
There you have it, fondue for 2 from scratch.

Out and about in Praia

Sometimes you just have to get out and about in town.  Especially when it is like being on a vacation.  As the weather is getting a little warmer and a little less windy, I am feeling a pull towards the beach.  I just want to go hang out down town and enjoy the scenery.

Last week, Ryan and I went to dinner one night at one of our favorite restaurants, La Barca.
We do not usually get an appetizer, other than bread, but I was really craving bruschetta that night.
I am so lame!  I order this dish every time I go to La Barca.  This is the pasta primavera and it is so light and fresh and the veggies are always perfect.  I can't resist ordering this.

Ryan on the other hand did order something different.  he always gets the tortellini, but on this night, he went with a cheese pizza.
Now, the real reason we went here was for our favorite chocolate cake.  When we asked if they had it, the waiter said yes.  So I ordered 2 pieces.  Nope, only 1 piece left.  Darn.  Ok, plan B.  I let Ryan order the cake and I ordered the ice cream crepe.
Ryan was nice enough to share with me.  I love this cake!
Another great spot in Praia is the market.  On Saturday we went down there to check things out before they closed at 12:30 that afternoon.  I was always hesitant to walk into the peixaria (fish market) myself, so with Ryan there, I was excited to go in.  If you are not one to look at dead fish pictures, stop reading now!

I think the fish lady thought I was nuts taking pictures of dead fish.  I should say fresh (but dead) fish.  These are caught at night and then brought in for sale the next day.  They have a time limit on this, so they are all guaranteed fresh if you buy from a market.  I think the grocery store can keep them for an extra day.  The restaurants go to fish markets like this, or the fisherman deliver right to them. 
These are boca negra.
I am not positive, but these are abrotea.  I have ordered these before and they are usually lightly fried fillets.
Bicuda...AKA barracuda.  These are different from the ones I think they have back in the States that are aggressive.  I never knew people ate barracuda until I moved here.
Octopus anyone?
Last up, eel.  I know some of you may eat eel with sushi.  The conger eel is the silver colored one and the moray eel (the super scary and aggressive) eel is the black with yellow spots.
While we were at the market we also picked up some fresh produce and bread, which you will see later made it into our from scratch meal over the weekend (I swear that post is coming soon).  While looking around, I spotted these fresh fava beans  The other day Andrea from Andreas Wellness Notes posted about some fresh favas and asked for ideas on how to prepare them.  I told her they love favas on the island, but I did not know if they had them fresh.  Well, I guess I found my answer!
QUESTIONS:  Did you go to a farmer's market over the weekend?  When dining out is there a go to or must order dish that you find yourself always ordering?  Do you buy fish at a fish market?

Thank you again for all of your comments, thoughts and input regarding my questions and statements about nutrition.  I have an awesome post about my from scratch meal, but Ryan has today off, so the fun is still going on.  That means the post will be coming as soon as I get the other pictures uploaded.  Oh boy was it a good meal.

Since I had few food pictures last week, I thought I would share some of my random tortilla (actually homemade whole wheat chapati) creations.
The first one I made had reduced fat cream cheese, surimi and broccoli.
It made a nice, quick and easy dinner one night last week.
Then I made a dessert creation.  I thought PB and banana would make a great combo.
Yeah, I was right, this was so good.
