Veggie Pasta Bake

Thanks everyone for sharing some of your favorite classic movies. I will say that I too love the Wizrad of Oz. What great taste everyone has! Speaking of taste, I wanted to share with you my yummy pasta bake I made Tuesday night for my class. If you are new to reading, I am working on a Master's degree with the University of Oklahoma, but the classes are offered here on the base. Each class we take runs for a week with the prof here and we take turns cooking dinner or bringing snacks. My week is super slammed, so I picked Tuesday as I that was the only day I have off this week. So, here is my veggie pasta bake...

Stating with the past and sauce from the local grocer.

The ya gotta get the veggies.

Looks good enough to eat!

Dice it all up...
Love the colors...
Boil the pasta...
Cook up the veggies...
Add veggies to the sauce...
Mix pasta and sauce and then put in a casserole dish or pan.
You can top with cheese if you want...
The bake in the oven at 365 for 20-25 minutes...
This was the end result. It was very tasty and I think everyone liked it, including the meat eaters. Like how I snuck veggies in to everyone's dinner?
This was the first time I made this and it turned out well so I will probably make this again. Well, except next time I will know not to make so darn much. 2 bags of pasta and 2 jars of sauce with all those veggies = 2 full pans of pasta bake, and lots of leftovers.

This dish looks AMAZING!! I don't eat pasta a lot, because I am not eating wheat, but I do like to try different wheat free pastas, and my favorite pasta dish (which DOES contain wheat) is my grandma's lasagna. She isn't alive anymore but my aunt makes it now and it's just TOO GOOD to pass up!! Oh man, it makes my mouth water just thinking about it!

Your pasta bake looks awesome! And you are right, it's a good way to "sneak" some veggies into dinner. I love pasta with almond/tomato/basil pesto or a very simple lemon/basil sauce.

I normally prefer pasta without tomato sauce but this looks super yummy with all those veggies!

Do you like taking a class all in one week? Must be really fast paced to cover everything. So fun that you all share a meal!

I eat pasta A LOT so I can't pick a favorite. I definitely like mixing veggies into pasta though. Oh, and mac and cheese too!

I love adding veggies to my pasta. I'm not sure if I have a favorite, but I love pesto or anything with tomatoes!

I love baked ziti! Zucchini is one of my favorite cooked vegetables, and your veggies look sooo fresh and delicious! Oh, and mushrooms and garlic, of course!

I love gnocchi. I love when pasta dishes incorporate good cheese, interesting ingredients, and preferably some kind of squash! And of course, baked with CHEESE! >.<

Oh, that looks so good! I will have to try that with my gluten-free rice pasta. Zucchini and eggplant are my favorite veggie add-ins!

We love veggie-packed pasta dishes - just last night we fixed a spinach, tomato, and green onion pasta bake, actually... This must be the time of year for pasta bakes! :-)

ohh this looks deliciosu!! I love pasta with homemade tomato sauce and diced, roasted eggplant/brocolli-I can eat this everyday! (well maybe not EVERYday) but alot!!
