Banana Crumb Mmmuffins

When I spotted this recipe online, I knew I had to give these a try.  Banana+Crumb=YUM!

I actually made these last week while Ryan was doing some homework.  A little light bulb went off in my head and I thought it was the perfect time to whip up some muffins.

Good thing we had some bananas sitting around.

This was thick and I could smell already that these would be delicious.

Lastly, the crumb topping went on.  OK, not so crumby in my case, it was more like plain cinnamon and sugar, even though I put the right amount of butter in.

Didn’t seem to make a big difference.

Once I got them out of the oven, I let them cool a little, but I was anxious to give one a try.

Yes, they tasted as good as they look.

QUESTIONS:  What is your favorite kind of muffin?  Do you have any tips for getting hot muffins or cupcakes out of the pan and on to a rack without burning yourself?

This look so good! I love a crumble top!

The best tip for getting muffins out--let them cool on the rack, in the pan, for 10-15 minutes, then take them out. No more burning!

I definitely agree with Beth, let them cool first, in the pan! You just gotta be patient (I know it's hard!). Since they are in the wrappers, they won't burn.

I like muffins to be a day old. I hate it when they're fresh-baked, which is weird...I just don't like the way they are soft and disintegrate easily, because I like to nibble at them.

Your muffins sounds mmmmm!!! :D

I've actually made that EXACT allrecipes banana crumb muffin recipe! They're good, aren't they? I'd have to say banana crumb is my favorite kind of muffin, although I wouldn't say no to chocolate chocolate chip.

I usually just turn the muffin tin over a cutting board and use tongs to move them to a cooking rack (some get a little squashed that way), or if I've used muffin papers, I use a fork to get them out.

Blueberry Buttermilk (made them almost daily the summer I worked at my dad's soup & salad bar restaurant). The secret was just barely mixing the wet with the dry, and using hands/fingers instead of a spoon. We also froze the fresh blueberries so they wouldn't 'bleed' into the dough but still be moist and just pop in your mouth.

These look delicious - I can almost imagine biting into the crumb topping. I love allrecipes.com. I've yet to not find a good recipe from that site!!
