Makin’ more meals

One of my weekly meals was a Jewish dish called kasha varnishkas, or also commonly known as kasha and bowties.  Any idea what kasha is?

This is kasha.  Kasha is buckwheat groats.  They have very distinct smell and taste, which of course reminds me of grandmas house.  They are really pretty good, so go ahead and try them sometime.  Ryan had never had them before, and he really enjoyed this dish.

I kept it simple with my kasha and only added some onions.

Then I added my liquid, which for me was veggie stock, and let the kasha and onions cook in the liquid.  Just like rice or quinoa, it will absorb the water and fluff up.

I added the pasta, which was cooked separately, and then mixed it all up.  I decided that we needed some color to go with this meal, so I steamed some broccoli.  This meal was really good.

A few weeks back I attempted to make these salmon cakes, but I found the canned salmon to be too much for me to handle with all the skin and bones crammed in there.

It was a lot easier working with the salmon this way.

I am not a big horseradish fan, but my taste buds have been changing recently, so I decided I was going to use it anyway and pray I liked the salmon.

This acts almost like a mayo and then the bread crumbs really help everything to stay together.

They did get a little crispy on the one side of the pan.

I made them more like salmon burgers and served them on rolls.  Again, I needed a little green, so I made some veggies for the side.

I loved these with the horseradish and everything.  Very tasty and so easy to make.  I would say dinner was ready in about 15 minutes.

QUESTIONS:  Have you ever had kasha before?  Do you like salmon burgers?

we made lasagna this weekend w/ spinach, mushrooms and ground turkey :) From Scratch Biatch!

I don't think I've ever had kasha, or at least I don't remember. My friend in high school was jewish (actually, most of them were/are!) and her grandpa owned a jewish grocery store. We ate there all the time so I'm sure I've had it before.

The salmon "burgers" sound great. I'm with you on the canned salmon, YUCK, I definitely prefer it in the pouch. I can't stand the idea of bones in the salmon, even though they are packed with calcium and vitamin D.

I love anything salmon! BUt I've never had kasha before, though I've known about it for a long time. Since it has your stamp of approval, I'll have to check it out!
