Fajita Style, From Scratch

Another weekend has come and gone, so you know what that must mean...oh yes, another 'From Scratch' meal prepared and enjoyed.

This week we went Mexican.  Ryan bought this cookbook.  It is fantastic.  So many details, it is more than a cookbook.
If you are making From Scratch Mexican, you better be making your own tortillas.
How simple can it get...only flour and some vegetable shortening.

Mix it all together...
Then you add some water with salt dissolved in it, and poof, a nice looking dough ball.
This recipe was for 12 tortillas, so we portioned them out and set them aside until we were almost ready to eat.
First up were the olives.  Ok, these are more of a Spanish thing, but we spotted them in the store and Ryan was looking to recreate the olives from Buzio's restaurant, so we thought we'd give it a try.
The got tossed with a little olive oil and a lot of garlic, then they sat for a bit until it was time to eat.
Next up, the veggie prep.  Since Ryan was making his own fillings, I took care of the veggie strips.  
Chop, chop, slice, slice...
Sauteed in a little olive oil and sprinkled with only black pepper.
While I did veggies, Ryan took care of his turkey.  Peru is the Portuguese word for turkey.  Yes, I pulled my little dictionary out while we were in the grocery store just to confirm.
He ground up some salt and thyme to use on the turkey.
I think he laughed when I took this picture or the meat.
He coated it with his seasoning mixture and it was ready for some cooking action.
Then he chopped up some tomatoes.  Although we didn't make salsa this time, we did use chopped tomato as a condiment.
Then it was finally time to get down and dirty with some homemade flour tortilla making.
After we rolled them all out, we used the amazing kitchen gadget...the digital electric griddle.  This was the perfect way to cook these tortillas.  Just barely a minute on each side and we had warm tortillas to wrap our food in.

Ok, finished product time:


Olives and some tomatoes and freshly shred cheddar cheese for toppings.
Turns out we had no white wine to go with dinner, so we grabbed this bottle of red to enjoy with our meal.
As always, our candle lit dinner for two.  I love that we enjoy a candle lit dinner once a week.  Too bad when we were all dine eating we hoped a waitress would come out of the kitchen and clear everything off the table for us...but no such luck!

ahhh we love Rick Bayless! We are super excited to go to his restaurant this summer in Chicago! Laura and her fiancee just moved there so we plan on visiting :) BRING ON THE MOLE SAUCE!!

I just started making my own tortillas and I don't think I'll ever go back to the packaged version. We love them. I've only made the corn variety though. These look great!

Zucchini in fajitas -- love it! I've never made homemade tortillas (not shocking!) but the look fabulous!!!!!! I love fajitas -- the onions are my favorite! And on top -- guacamole and pico de gallo!

I heart Rick Bayless! When you get back to the states, most ethnic grocery stores sell Masa flour - all I have to do is add water to my mix and then roll them out. I even have a tortilla press (just one more reason I have too many kitchen gadgets!).

While I can have Mexican every day and not get sick of it, hubby - not so much - but we do like chicken tacos and I've made beer battered fish tacos - not as healthy but oh so good!

yuums those look so good! My fave tortilla fillings would have to be guacamole or avocado, cheese, onions, and peppers! ohhh and all of the extras too lol like salsa, sour cream, and refried beans...I actually had that today minus the cheese lol

I've never made tortillas, but I have a gluten free mix for pizza dough that you are supposed to be able to tweak to make tortillas instead. I've been meaning to try it. I love Mexican, but my husband is afraid of anything with the least bit of spice. So it is a rare occasion.

Great job on the homemade tortillas! Now I'm curious to try making my own, but I'm seriously igged out by shortening. especially after that cake class. I wonder if I could use frozen olive oil instead--it works in pie crust.

My favorite is that you always make your own breads, tortillas, etc. The tortillas look fabulous! I love making my own tortilla chips...just cut them in triangles and stick them in the oven.

YUM!! These look so delicious! I have never made my own tortillas, but from this post it doesn't look too difficult, so I should! Of course I'd have to make them corn or rice tortillas...

I love avocado, tomato, red pepper, cheese, and lean ground beef in my tacos. But really, I like anything in a nice warm tortilla! I also like Greek yogurt as the "sour cream".

I've never tried making tortilla from scratch before...what a pity, since I am almost practically in Mexico city, and I see fresh masa dough in the markets.
