Quiche, From Scratch

Some time last week I spotted a premade refigerated broccoli cheddar quiche at the grocery store and thought that sounded really tasty.  Ryan agreed with me on that, and so we pulled out this handy dandy, but not so easy to follow sometimes, cookbook.
Sure enough, we found these recipes...
We were good to go.  Well, almost good to go.  No where could I find a pastry dough blender thing.  Yeah, you know what I mean, and they didn't have any around, so the recipe said we can used fingers too, and that is just what we did.  So we started with the flour and added the vegetable shortening.
Now, this may look like dough, but I will mention we are not experts at pastry dough making and apparently not experts at reading directions either, but whatever, it still looked fine to me.  We only missed a small step of adding cold water, so we went back and did that before we used the dough.
Rolling this between plastic wrap was the best idea ever!
Then I worked on getting the broccoli ready.  It called for well drained additions to the quiche because too much moisture would make a runny quiche.
I decided to use the rice cooker, which doubles as a veggie steamer.
Next up was the filling.  Love the US Forces Europe product!
These eggs were fresh from the neighbors chickens.  They still had dirt on them.
This is grated onion.
Mix it all up with a little salt, pepper and nutmeg.
Cheddar time!
This was the crust brushed with egg yolk, but there was not enough egg yolk to coat and I am sure we didn't something wrong here.
Fill it with shredded cheddar...
and the broccoli was added to the filling...
which was added to the crust.
Baked in the oven for 30-35 minutes at 375.
WARNING: If you are vegetarian, so not look.  Ryan wanted me to take a picture of his bacon.  I did not eat this.
There was no way we would forget a side dish with this meal, so we went with some seasoned potatoes.
Ryan used olive oil, pepper and garlic.
Hehe, they look like apple pieces.
Yes, we have quiche success.  Nothing is burnt.
Potatoes are all ready too.

Melinda! You did such a fantastic job with that pastry crust! There are people that have been baking their whole lives that would not attack pastry crust with such resolve! That quiche looks amazing!

Nice Melin! Roommate Liz has made a Brocoli Tofu quiche a few times. Using a spelt pastry crust, its all vegan, and delicious. You should try a tofu quiche sometime!

I'm not a huge fan of quiche, but I did have one at the bed and breakfast I stayed in during my trip to San Francisco. It was a salmon quiche, and it was incredibly rich and delicious! I love the Joy of Cooking cookbook! I feel in some areas it is like a cookbook bible. I've made some killer desserts from their recipes.

Pastry crust is actually pretty easy to make...I don't know why people are so intimidated by it! Your quiche looks wonderfully perfect! I've never really tried a real quiche before...the sloppy ones at my school dining hall does not count! >.,<

that does look yummy!! i had been craving quiche the other day I thnk its from seeing all of this deep dish polenta pizza aroundt he 'sphere...it reminds me of quiche!! yourslooks DELICIOUS!!

Yep, the cold water is key. Also if you use shortening or butter - put it in the freezer the night before and then grate the fat into the flour - it gets evenly spread that way and makes for a flakey crust.

Great job though - it looks delicious - and I would steel a piece of your husband's bacon!

The great thing about quiche is you can use just about any vegetable you have - I sometimes call mine "kitchen sink" quiche!

I never thought to use my rice maker as a vegetable steamer - thanks for the idea!!

Ahhh! That looks wonderful!!! I bet that crust just melts in your mouth! I love spinach quiche, though I've never made one! I should, though! However, I would end up eating it all -- hubby doesn't care for quiche (crazy man!)!!

There is this recipe for bread and milk soup that I think I may try given your escapades with the broccoli. I see the ingredient "cream" in main dishes and think "um, NO!" that is ALL the more reason to try it, right?

I made quiche ONCE in food science class, does that count?! Yeah, I usually just choose to make omelets, and forgo the quiche. Unfortunately Nick doesn't like anything in his eggs, so quiche is out of the question. Oh well, I should still try it sometime, it look great Melinda!

You have made me SO hungry!!! Your quiche looks simply delicious! And I see that you are extremely handy in the kitchen. Good thing that I have my husband to make delicious vegetarian meals for me! The day that we eventually meet, can we make that quiche together?

Your quiche is gorgeous!! I'm very impressed by your perfect pastry crust!! Broccoli cheese quiche is my very favorite, too, and roasted potatoes are my fav way to cook potatoes! You definitely fixed two of my favorite dishes! :-)

The most recent quiche I fixed was a caramelized onion one - quite yummy! :-)
